Bruschetta of Roasted Pork Loin with Fig Jam to Pair with Terra Vina Syrah

Ingredients

•Quality French bread cut into 1/2 inch slices
•Roasted pork loin, sliced thin
•Fig jam, purchased or recipe as follows
•Fresh parsley, chopped fine

In a 350 degree oven, toast the French bread slices till they are lightly browned. Upon removing them from the oven, rub each piece with a garlic clove.

For the pork loin, use your favorite seasoning recipe and roast till medium, to an internal temperature of about 140 degrees. Let it rest for 30 minutes before you slice thin.

Fig Jam Recipe

•olive oil for sautéing
•1/4 cup fine diced yellow onion
•8 dried figs, quartered
•2 T. sugar
•1 cup of good quality Syrah or Pinot Noir
•1 small sprig of rosemary

In a medium hot sauté pan, add a T. of olive oil, and then sauté the onions until starting to brown, about 5 minutes. Add the figs, sauté for a minute or two longer, then add the rest of the ingredients and turn to a simmer. Simmer till almost all of the liquid is gone. Remove from heat and cool before service.

Lay the toasts on a platter. Place thinly sliced pork loin on the toasts. Place a teaspoon of jam on top of the pork, and garnish with chopped parsley and fresh figs, if available. Serve with Terra Vina Syrah.
