Bruschetta with Grilled Chicken and Mango Salsa to Pair with Terra Vina Chardonnay

Ingredients

• Quality French bread cut into 1/2 inch slices
• Grilled chicken breast, sliced thin
• Mango salsa, store bought or recipe as follows
• Cotija cheese, crumbled

Preparation

In a 350 degree oven, toast the French bread slices till they are lightly browned. Upon removing them from the oven, rub each piece with a garlic clove.

Mango salsa

• 1/2 cup diced mango
• 1 T. chopped green onions
• 1 t. finely diced red pepper
• 1 T. finely diced red onion
• 1t. mild hot sauce, Tapatio for example
• 1 T. olive oil

Mix all ingredients together and let sit for an hour before served.

Lay the toasts on a platter. Place thin slices of chicken on each piece. Top with a small spoonful of salsa, and a crumble of Cotija cheese. Serve with Terra Vina Chardonnay.

Serve 8
