Black Fig & Red Grape Mostarda to top Porchetta Rillettes to Pair with Petit Verdot

Ingredients

• 1-1/2 cups dried mission figs, stems removed, quartered
• 2 cups red seedless grapes, halved
• 1-1/2 to 2 cups balsamic vinegar
• 1-2 to 1 cup water
• 1/4 cup honey
• 2 sprigs fresh rosemary
• Pinch of kosher salt
• Pinch of fresh ground black or pink pepper

Preparation

Place all ingredients in saucepan stir to combine and simmer over medium-low flame until liquid is reduced to a syrup, approximately 30-40 minutes

Makes Approximately 2 cups.

Drink wine. Be happy.
